The amino acids found in bovine gelatin are also used in the production of collagen needed for healthy skin and joints. If you are vegan you can use Agar Agar for this recipe. Enjoy these to make sweets like rice crispy treats or with your favorite hot chocolate!

Ingredients

  • 3 tbsp Bovine Gelatin Can substitute for Agar Agar if vegan.
  • 1/2 cup Cold Filtered Water
  • 1 cup Organic Maple Syrup
  • 1/2 cup Water
  • 1/4 tbsp Sea Salt
  • 1 tbsp Vanilla Bean Extract or Powder

Instructions

  • Bloom 3 tbsp of Bovine Gelatin with 1/2 cup cold filtered water. (Use Agar Agar if vegan)
  • Add 1 cup of organic maple syrup to 1/2 cup of water + 1/4 tsp sea salt to boil and simmer. Make sure it does not boil for longer than 30 seconds as you do not want it to get too hot.
  • Mix bloomed gelatin and maple syrup mix on high for 10 minutes using a stand mixer (I used @kitchenaidusa) + add 1 tbsp of vanilla bean extract. (This part is key as it allows the mixture to aerate which gives it that fluffy texture and flavor. I don’t think it will give the same texture using a hand mixer )
  • Refrigerate for 8-10 hours then cut to desired shape.
  • Cut into 16 1.5 x 1.5 inch pieces. Can be cut smaller or into shapes with cut outs.
  • Enjoy within 4 days of making!
