This carrot ginger soup is an easy immune-boosting soup!

Ingredients
  

  • 9 Large Carrots
  • 1/2 tbsp Grated Ginger
  • 1/2 Yellow Onion
  • 3 cups Bone Broth
  • 1 cup Coconut Cream Optional if you like it cremier
  • 1 tbsp Celtic Sea Salt
  • 1 tbsp Pepper

Instructions
 

  • Roast carrots and 1/2 onion with olive oil & salt and pepper for 30 min at 375.
  • Blend carrots, onion and ginger with bone broth. (You can add more seasoning like garlic or cumin or add coconut cream to make it creamier)
  • Garnish with olive oil, pumpkin seeds, chive or sip! Enjoy!
